I brewed an Amber and a Pale Ale last Saturday. The Pale Ale is hopped with Galaxy, Citra, and Nelson and half of it will be oaked. It was a pretty uneventful brew day but I did realize that my new coil chiller is going to have to go and I'll move back to the plate chiller. I'm wasting way too much water and it is just really inefficient. I'll make some redesigns to the brewery that will allow me to recirculate and filter out trub and hops before I put it through the plate chiller. Any one have experience with a setup like that? I've been filling the taps back up in the house and have brewed a British Golden (gluten-reduced), Belgian Blond, IPA, and American Blonde. First off, many thanks to my wife for letting me put in countless hours building this brewery as I know it was hard at times wrangling the boys without me. I also want to thank my dad for helping with the construction of the space, also sacrificing some weekend days to help me build the stricture during the winter. The brewery now sits in an approximately 12 x 12 space that is set up as a full wash-down area. It is great to have everything I need in one spot. I just hope that after 3 years, I still enjoy brewing as much as I did previously :) We will also be finding other uses for the space when I am not brewing, but more on that later. So without further ado, here is the new brewery!<br />

As you can see from the photo above, the stainless cladding on the walls helps with durability as well as cleanibility in the brewery. I also finished the floors with a chemical-resistant epoxy that should preserve the concrete floors.<br />
<br />
The brewhouse itself did not change too much, besides changing out some electrical fittings and installing a new oxygen aeration system with a bigger oxygen tank.<br />

I added a stainless sink at the end of the prep table as well. The sink was very nice to have on brewday for cleaning purposes as well as general supply. There is a 12" exhaust fan mounted in the wall that you cannot see, which takes the steam and heat out of the brewery.<br />

I did have a chance to upgrade my fermentors during the lull and I also had to upgrade the temperature control as well. I have the same cooler in which the 2 fermentors sit in (again many thanks to friends and family that helped me move all of this out of storage!). </div>

All and all, the brew day went well. It took much longer than I planned, but I was a little rusty getting back to it after 3 years! Also, I had to clean nine kegs, some with three year old beer :) I bet I could have sold that sour concoction in the kegs for a pretty penny. Right now, I have a saison and pale ale bubbling away in the fermentors. I need to start getting the keezer ready to serve this beer, which may be a whole other issue...hopefully one that doesn't take me a year to resolve. </div>

They decided on a citrusy blonde ale and a hoppier American pale ale. Both will be great choices for a wedding crowd that will span from BMC drinkers to Colorado hopheads. I had never chronicled my brew day before, so I decided to film a time-lapse video of the brewery and condensed a 10 hour day into 2 minutes. As you can see, brew days also mean visiting with friends and neighbors! The time stamp starts at 6:00 am, but started before the camera was rolling at 5:00 am. Enjoy!<br />

I brewed a saison with an American twist to it. With all of the new American hop varieties that are coming out, I decided to use some of them to pair with a saison. I used Inland Island's French Saison strain which is very similar to Wyeast's 3711. A yeast that produces a good balance of phenols and esters (pepper and fruitiness) along with nice citrus notes. Therefore, I paired this yeast with Mosaic and Citra hops, both give flavors and aroma of tropical fruits and citrus. At first taste, this one came out very well. It is lower in ABV than my previous saisons at around 6.3% ABV, but it finished bone dry at 0.5 P. Very nice and should be ready next week...just in time for warmer weather. I also brewed an American pale ale (which I rarely do) with Mosaic and Centennial hops. If you can't tell, I haven't used Mosaic hops before and wanted to see what they would do! The grain bill was simple with mostly pilsner, maris otter, and crystal malts. I tasted this last night and it is extremely drinkable and refreshing. I think this is a good alternative to the enamel-dissolving IPAs that we sometimes encounter. This pale ale gives you the hops that you need along with a light malt backbone. It's great!<br />

My next brewday will involve brewing beers for my sister's wedding this spring. She is getting married in Lyons at an outdoor venue, so her and Charlie will be helping me brew a refreshing citrusy blonde ale and a hop-aggressive IPA that is not bitey but has huge hop flavor and aroma. Since it has been well over a year since I posted on the blog, I guess there is a lot to catch up on. I feel like this is similar to when you haven't seen someone in over a year and they ask you, "What's new?". Let's see. In the brewing world, I continue to keep my taps full while entering some competitions from time to time. I won a ProAm spot in the 2014 GABF with my Mayan Chocolate Stout (chocolate chili stout), but unfortunately the collaborating brewery dropped the ball and missed deadlines for applications. Therefore, I was not able to get my beer into the festival. No worries, there was other stuff going on. In the midst of remodeling my kitchen and getting a new puppy (don't ask), we had a handsome baby boy in September! Everyone is doing great and he is a funny character. He is now starting to laugh and giggle at us...a very special time. So, I guess that kind of answers , "What's new?". </div>

Some of the more interesting beers that I have brewed lately have been a gluten-free blonde, vienna lager, and a great IPA. I think this will be the last time I brew a gluten-free beer :) I brewed my award-winning Blonde recipe (Micah's Blonde) and then added White Labs clarity-ferm (given to me by my gluten-intolerant neighbors) at the beginning of fermentation. I am a very big supporter of White Labs yeast and all of their products, but I'm not sure I'll use Clarity Ferm again. The beer turned out very flat in flavor and extremely light/thin in body...not very nice to drink. I'm not sure what happened here as I have brewed this recipe many times before. Regardless, I think I'll keep the gluten in my beer and offer wine or spirits to those that are gluten-intolerant in the future. </div>

On that note, I did make some hard cider as well. this year. Our apple tree in the front of the house had a HUGE crop year and we had more apples than we knew what to do with. With no crusher or press, I smashed the apples with a 2x4 and rung them out in a muslin bag by hand....actaully got 4 gallons this way :) It came out OK and I actually aged it a bit on oak. It tastes closer to a chardonnay now than cider. </div>

I also had a good homegrown hops crop this year. My Chinooks came in nicely, but not as good as the plant I gave to my Dad last year, We harvested two 5 gallon pails of hops from his plant. In all, I ended up with about 3 lbs. of dried hops. I will never be able to use all of them!</div>

I am in the middle of trying out a new temperature controller as well for my fermentations. It is a BrewBit (<a href="http://www.brewbit.com/">www.brewbit.com</a>) controller. I like it because it can accept 2 inputs and has 2 outputs. Therefore, I only need one piece of equipment to control my 2 fermentors at the same time. This is relevant since my brew days are always <u>double</u> brew days. I can also monitor the fermentations online or on my phone from anywhere which is nice. The touchscreen is a nice option as well. I like it, but I still need more time on it to make a true decision if it was worth it.<br />

We threw an Oktoberfest party and wow, what a great time it was. 50 lbs. of home-smoked meats, 20 gallons of LBC beer, about 100 people, and a bouncy castle for the kiddos. Yep, that's right, a bouncy castle. We also raised some money for the Love for Lyons fund which is helping the people of Lyons after the flooding. It was a really great time in the backyard! Thanks everyone for showing up.<br />

On another note, the Great American Beer Festival is coming up this weekend! Let's all root for Wampum Porter to bring home a medal. I won't be able to make it this year due to a planned trip, but my beer will be poured at the Pro-Am booth on Thursday if anyone is planning on attending that evening. That is over 4 lbs. of hops! The wort turned into green slurry immediately and it was a little difficult to separate the wort from the hops into the fermentor. I started with 8 gallons of wort and ended up with only 4 gallons into the fermentor! This one will definitely be for the hopheads.</div>

This is my 2013 Great American Beer Festival ProAm entry. We hit all of the numbers for my recipe. Kirk and Eric were great to work with up there and I appreciated their attention to detail with every aspect of my recipe from start to finish. We brewed 15 barrels of my beer, which equates to almost 500 gallons! We used a little over 1200 lbs. of grain. It was huge. If the fermentation goes as planned, we should be sitting at around 8.7% ABV. For those of you that don't know, a Baltic Porter is a higher strength porter brewed with a lager yeast. Therefore, it turns out to be dangerously drinkable!<br />

It was a great day of brewing and I'll keep everyone posted about when the beer will be ready for consumption!<br />

On a smaller note, I'll be brewing my Oktoberfest beer this weekend at home to be ready by the end of September. I'll be using an Augustiner lager yeast for fermentation. The guys at C.B. & Potts were nice enough to give me some of the same yeast out of the fermentor cone that is being used to ferment my Wampum Baltic Porter! Perfect. I will also be brewing a Double IPA with all of my older hops...it will be crazy. I am shooting for an 8.5% ABV beer with about 3 lbs. of hops in it. I was sick of looking at the hops that I never use, so why not try to use them all at once! How about Infinty IBU IPA for a name?<br />

Sandbox American Wheat is conditioning in the kegs and Cottonwood Abbey is finishing up in the fermentor.<br />

<span style="text-align: left;">I had a handful of beers entered into a home brew competition that was held a couple of weeks ago in Fort Collins and I won some medals. I won two gold medals for my Western Slope Peach Saison and Wampum Baltic Porter. I also won two silver medals for Micah's Blonde Ale and Pebonkas Imperial Stout. It was a pretty rewarding experience to hear my name called for all of the beers with my family there with me. Better than the medals was the fact that </span><b style="text-align: left;"><span style="color: orange;">one of the local breweries chose my beer to brew for the 2013 Great American Beer Festival!</span> </b><span style="text-align: left;">This is now the 2nd time that this has happened in two years and it is incredible. C.B. & Potts (a brewpub chain) chose to brew my Wampum Baltic Porter at a commercial scale for entry into the ProAm competition. Before they announced this, another professional brewer came up to me and told me that </span><u style="text-align: left;">they</u><span style="text-align: left;"> also wanted to brew my Western Slope Peach Saison at their brewery for the competition. Unfortunately, only one ProAm entry is allowed per amateur brewer! The two brewers flipped a coin for the entry and CB&P won. Learning about that from the other brewer was very rewarding. There were 600 beers in the competition, so I feel really good about how mine fared. </span></div>

My good friend is graduating from his MBA program at CU. It's been a busy couple of years for him and there is reason to celebrate! We brewed a couple of beers for his graduation party that is coming up soon. He wanted easy-drinking beers for his guests. We decided on a blonde ale and a pale ale. The blonde ale is called Micah's Blonde Ale (MBA)...clever. We haven't decided on a name for the pale ale, though Micah is suggesting Pale Buns Pale Ale, thoughts? I've been calling it Picker's Pale...like hop picker.<br />

Both beers came in around 6% ABV. MBA is a very light colored ale, almost straw colored, with a hint of pilsner maltiness and a nice floral and spicy hop flavor. It's a good summertime beer. Micah also wanted a hoppier ale with hops that give the beer a citrus and dank flavor, so we brewed the pale ale. We chose mostly Centennial hops, with some Columbus in the hopback. Both beers taste really good right now and I can't wait to tap them at the party. Congrats again, Micah! A job well done.<br />

State Representative Kevin Priola (R) killed his bill to expand full-strength beer sales in Colorado to grocery and convenience store in multiple locations. The bill would have allowed grocery and convenience stores to sell full-strength beer made by a brewer that produces 6 million barrels or fewer each year, mirroring the commonly accepted definition of a craft brewery. It also would have allowed companies to get as many as five full liquor licenses. At this point, a liquor store owner is only allowed one license in the state of Colorado. Therefore, one person cannot open multiple liquor stores in the state.<br />

While this might seem like a great bill at first, it really could have been detrimental to our Colorado craft brewers. Why wouldn't we want the convenience of picking up our favorite craft brewed six-pack at the grocery/convenience store when we are already there getting our food?<br />
<br />
Well, here's the thing. Do you think the big box (Kroger, Safeway, etc.) grocery stores or convenience stores would have carried that favorite craft-brewed six pack of yours? Most of the shelf space in the stores would have been reserved for the big beer guys and the smaller guys would most likely get squeezed out. How many hoops do you think the craft brewers would have to jump through to get their beer on these shelves, as opposed to just walking into the local liquor store and talking turkey with the local owner? It would have been a cascading effect from there. The local, privately-owned liquor stores would begin to go out of business because their craft beer sales would decrease and therefore the only other outlet for the small craft brewers would have been the grocery and convenience stores, where they may or may not have been able to display their beer. If the small craft brewers cannot sell their beer, they too would soon be forced to shutter. I know this sounds like an extreme result, but it is more possible and realistic than you might think. Therefore, it all goes on down the line and affects more segments of the industry than you think. Now, is all this worth the five minutes you might save picking up beer on aisle 15 as opposed to walking next door to the independent, locally-owned liquor store?<br />

I took some of this from a previous post that I had made in the past because this issue has come up every year for the past 5 years in the legislature, so it is an ongoing topic. Maybe this directive will finally be squashed for good!<br />

Here in Colorado, we have a very special craft brewing segment and we need to preserve that as best we can. We are becoming one of the craft beer leaders in the country and it is important to our economy and our beer drinkers' freedom to maintain this trend. Hell, Boulder just opened its 19th brewery...19...in a town of less than 100,000 people! That's amazing and speaks to the local, artisan culture that we are creating as brewers and beer drinkers alike. <br />

It also amazes me that Rep. Priola is so ignorant and blind to the damage this bill would have caused to Colorado's local economy. The fact that he would rather support large big box companies that base none of their headquarters in the state as opposed to supporting local small businesses is dumbfounding. How can someone like this stay in office? Hopefully, everyone recognizes his ignorance at the next election.<br />

This past weekend I brewed the Belgian Trippel and the Rye Pale Ale. The brew day went well...just loooong. I ended up going from 5am-6pm. Most of the time (of course) is cleaning. I had to disassemble 6 kegs and clean them all. In cleaning those kegs, I also dumped 10 gallons of beer down the road! The Country Livin' Stout and the Oaked Pops Ale traveled to far off places in the storm drain. The neighborhood smelled great for a little while! Always sad to dump beer, but it had to be done....nobody was going to drink this stuff, nobody. </div>

A couple of weeks ago, I also made some new chalkboard tap handles. Friends were confused about the labeling of the tap handles on the chalkboard front, so I tried to make it even more clear. I can now write the name of the beer right on the handle. I like them and the stain job came out great. In this case, the beer is disappearing! Some from drinking...some from unfavorable results. I bottled up the rest of <i>Jacked O' Lantern</i> and <i>Pebonkas Stout</i> (will wax and label these). The <i>Oaked Pops Ale</i> tasted atrocious after 9 months in the barrel and the <i>Country Livin' Stout</i> was a maple bomb (not good)...both dumped. All that remains is one lonely keg of Western Slope Saison waiting for seven of his friends.<br />

Planning on brewing a Rye Pale Ale which will be the second version of <i>Ryse of the Phoenix</i> from this past summer. I'm thinking some fruity/citrus hops would be good. How about a Amarillo/Citra/Cascade combo? I also upped the Rye grain from 29% to 33% of the grist. I'm hoping the spiciness of the Rye and the fruitiness involved in the Amarillo and Citra will be real nice.<br />
<br />
The second beer of the brew day will be a Belgian Trippel, which I have never attempted. It will be slightly different than a traditional Trippel in that it will have more than Pilsner malt and sugar as fermentables. I have added some caravienne and biscuit malt to the grist, as well as flaked oats for a creamy mouthfeel to the beer. I am also going to attempt to not add sugar and mash at a low temperature instead. It will be lower in alcohol as well, at around 7%. I will use Sterling and Styrian Goldings for hops. When I go out for a beer now, I have been leaning towards Trippels, so why not just brew my own!<br />

The GABF was in October and it was a great time. We went down early for the awards ceremony, which was HUGE. It was great to see entire theater fit for 5,000 people almost full. Muddy Huddy didn't earn any medals, but it was cool to see all of the other breweries and the beers that earned them top spots! I stopped by the ProAm booth while at the GABF to taste Muddy Huddy once again! It was fun to taste the beers from the hundreds of breweries there.<br />

Well, that was GABF in a nutshell.<br />

Next up, I'm brewing an imperial version of Muddy Huddy next weekend....called King Huddy. I hope it will be around 11-12% ABV. It will be part of a partigyle brew, with the second beer being a breakfast stout...literally. Flavors of smoky bacon, maple, coffee, and biscuits will come through on this one. It will be interesting.<br />
<br />
For those of you that don't know what a partigyle mash/brew is, it is a mash that results in 2 or more beers. The first beer that is produced is from a higher gravity wort that is taken from the "first runnings" of the mash. Basically, taking the wort that is produced in the mash and draining it into the brew kettle with minimal rinsing (sparging) of the grain. This results in a high gravity wort. The second beer is from the "second runnings" of the mash. Therefore, there is less sugar in the mash after the first runnings and sparging is often necessary. This results in a lower gravity wort in the brew kettle. Therefore, the first beer can be a higher alcohol brew and the second can be a lower alcohol or even a session beer. This also allows you to create two very different beers from the same mash. Things such as hops added and yeast used can be changed between the two beers from the same mash! I will also be adding additional specialty grains to the mash before collecting the second runnings to give the beer a different flavor (smoke and coffee). It could go very well...or very badly. Nonetheless, the process will be exciting and it will be fun to experiment with this facet of brewing. I'll keep you posted on how it turns out.<br />

Well, one month later, we took a family trip to Odell to try the finished product. It came out pretty good! A little lower in alcohol, 5.9% vs. 7.5% that I brewed. All and all, it is very tasty and we'll be taking another trip up with friends to sample it again.<br />

The day after the brewery visit, I brewed up two beers. The first was a Saison that will have 20 pounds of Colorado Western slope peaches added to it at the end of fermentation. The other beer was a wet-hopped harvest ale that was made with fresh hops from the backyard and Micah's yard. I had mostly Chinooks and Micah had CTZ. It will be a lighter beer at 4.6%, but it should have a good wet-hopped taste and aroma.These beers will be the first of the Harvest Series brewed each fall. <br />

So, this is the time of year where I want to have nothing but autumn seasonal beers on tap. I have the Oktoberfest lagering until October. The saison and wet-hopped ale will take two more of the taps in 2 weeks. I will most likely still have Bellamy Amber on tap at that time too. I also worked up an Imperial Pumpkin ale recipe tonight! Although, I don't have enough fermentors! Space will free up in a couple of weeks and maybe I can brew it then.
